Easy Vegetable Fried Rice

Fried rice is a popular restaurant favourite. Make it at home, and it's on the table in less than 30 minutes, plus you get to control the sodium levels and customize with your family's favourite veggies. Enjoy this quick, delicious, gluten-free and budget-friendly alternative to takeout tonight!

    Cook the rice overnight or an hour before and chill in the refrigerator.

    Heat 1 tbsp of olive oil in a large pan over medium-high heat. Add eggs, stirring to scramble and cook for 1 minute, until light and fluffy. Set aside on a separate plate.

    Add another 1 tbsp of olive oil into the pan and add in the garlic, diced onion and frozen mixed vegetables. Season with salt and pepper and sauté for about 5 minutes, until the veggies are slightly softened and aromatic.

    Add in the rice and mix until it is coated with the vegetables and slightly brown, about 3 minutes.

    Turn the heat off and add in green onions, soy sauce, sesame oil and cooked eggs. Stir until all the ingredients are combined. Taste and season the vegetarian fried rice with additional salt, pepper and/or soy sauce if necessary.

    Make it with Meat: For a budget-friendly meat or seafood alternative, mix rotisserie chicken or cooked shrimp into the cooked rice before serving. If using frozen cooked shrimp, thaw it in the fridge the night before cooking and add to the hot cooked rice to bring it to temperature.
