Witch’s Finger Halloween Cookie Recipe
Position rack in centre of oven, then preheat to 325ºF. Line 2 baking sheets with parchment.
Reserve 60 almond slices to garnish cookies, then pulse remaining almonds in a food processor until finely ground.
Beat cream cheese, butter, sugar, almond extract and salt in large bowl with an electric mixer until light and fluffy, about 3 minutes. Gradually beat in flour. Stir in ground almonds. Dough will be stiff.
Roll 1 tbsp portions of dough into 3-inch "fingers", then place 2 inches apart on prepared sheets. Press an almond slice into the end of each dough finger to form the fingernail. Use a sharp knife to make 3 crosswise slits on the top of each finger to form the knuckles.
Bake until lightly browned, 15 to 20 minutes. Cool 3 minutes on baking sheet, then carefully transfer to wire racks to cool completely.
