Ice Cream Bonbons

These ice cream bonbons are easy to make, and are just like bite-sized sundaes! It's as simple as topping vanilla wafer cookies with a mini-scoop of your favourite ice cream flavour, and draping it generously with melted chocolate chips. Tip: You can use milk, dark or white chocolate chips on these bonbons.

    Line a baking sheet with foil. Place a rack on prepared sheet. Arrange cookies on rack. Freeze 20 minutes.

    Using a mini ice cream scoop (about 2 tbsp-sized), scoop your favourite ice cream flavours directly onto cookies. Return to freezer and freeze at least 1 hour.

    Microwave chocolate chips in a medium microwave-safe bowl on high until almost melted, about 1 to 2 minutes. Stir until chocolate is completely melted and mixture is smooth. Stir in margarine until melted.

    Working quickly, spoon about 1 tbsp warm chocolate mixture over each bonbon, almost completely covering the ice cream and cookie. Freeze until chocolate is firm, about 1 hour or until ready to serve.
