Herb & Garlic Mashed Potatoes

Mashed potatoes are so good that they don't need a lot of love (you can't go wrong with fluffy potatoes and butter). But, easy seasonings are a fun way to change up a go-to dish when you're in the mood for something different. Add finely chopped garlic and parsley to make this family-favourite even more irresistible.

    Cover potatoes with water in a medium saucepan set over high. Bring to a boil, then reduce heat to low. Simmer until potatoes are fork-tender, about 20 minutes. Drain in a colander.

    Add margarine and garlic to same saucepan over medium. Cook, stirring often, until fragrant, about 1 minute. Remove from heat.

    Add potatoes, milk and parsley to saucepan. Mash until desired consistency.
