    Preheat oven to 350°F. Lightly spray an 8" square baking pan with oil. Line bottom with parchment paper.

    Whisk eggs with sugar, oil and vanilla in a large bowl. Whisk flour with cocoa, coffee granules and salt in a medium bowl, then whisk into egg mixture. Stir in chocolate chips. Scrape batter into prepared pan.

    Bake in centre of oven until a cake tester inserted into centre of brownie comes out clean, about 30 minutes. Transfer pan to a rack to cool slightly, about 10 minutes. Cut into 16 squares.
