    Position rack in centre of oven, then preheat to 350°F. Lightly spray an 8-in square baking pan with non-stick cooking spray, then line the bottom with parchment paper.

    Whisk eggs, sugar, oil and vanilla in a large bowl until smooth. Whisk gluten-free flour, cocoa, coffee granules and salt in a medium bowl. Whisk flour mixture into egg mixture, just until combined, then stir in chocolate chips. Scrape batter into prepared pan.

    Bake until a skewer inserted into centre of brownie comes out clean, about 30 minutes. Transfer pan to a rack to cool slightly, about 10 minutes. Cut into 16 squares.
