One-pan Greek Lemon Chicken Recipe
Heat a large frying pan over medium-high. Add 1 tbsp of the oil, then chicken. Cook, stirring occasionally, until chicken is no longer pink, about 5 minutes. Transfer chicken to a plate and keep warm.
Reduce heat to medium. Add remaining 1 tbsp of the oil to then pan, then onion, red bell pepper and oregano. Cook, stirring occasionally, until vegetables are tender, about 4 minutes. Stir in garlic and cook for 1 minute. Add spinach and cook, stirring occasionally, for 1 minute.
Stir in water, Harvest Chicken Rice & Vermicelli side dish and peas. Bring to a boil. Reduce heat to low, cover, and cook until rice is tender, about 10 minutes.
Stir in chicken and lemon juice. Sprinkle with cheese.
