Greek Quinoa Salad

Our Greek Quinoa Salad is chock full of grains and vegetables. Ready in just 30 minutes it's an easy salad to take to a summer barbecue or potluck. Tip: Quinoa can also be made ahead of time and refrigerated. This cuts the recipe time in half when you're ready to make the salad.

Prep: 15 mins | Cook: 15 mins

    Combine water and quinoa in a medium saucepan set over high. Bring to a boil, then reduce heat to medium-low. Simmer, covered, until liquid is absorbed, about 15 minutes. Set aside to cool slightly. Fluff with a fork.

    Combine quinoa with cucumber, bell pepper, cherry tomatoes, dressing and dill in a large bowl. Gently toss to coat.
