Vegetarian Turmeric-Coconut Curry Recipe

This vegetarian curry recipe leaves absolutely nothing to be desired. Rich and delicious, our easy coconut curry can be served as a main course, alongside brown rice or naan, or even as part of a buffet.

    Heat a large non-stick frying pan over medium. Add oil, then carrots, onion and salt. Cook, stirring occasionally, until carrots soften and onion starts to turn golden, about 5 to 7 minutes.

    Stir in garlic and ginger. Cook 1 minute. Stir in curry powder, turmeric, cayenne and cinnamon, then beans. Cook 3 minutes. Stir in coconut milk.

    Reduce heat to low. Cook, covered, until beans are tender-crisp, about 8 to 12 minutes. Stir in lime juice. Serve with naan bread, if desired.
