Jalapeño & Chicken Chili Recipe
Heat a large saucepan over medium-high. Add oil, then onion, garlic and jalapeño. Cook, stirring frequently, until softened, about 5 minutes.
Add chicken and cook, stirring frequently, until chicken is no longer pink, about 5 minutes.
Stir in water, beans, chilies and chicken broth until broth is dissolved. Increase heat to high and bring to a boil.
Reduce heat to low and simmer, stirring occasionally, until vegetables are tender and chicken is cooked through, about 10 minutes.
Serve chili topped with shredded cheddar cheese, sour cream, chopped cilantro and lime wedges, if desired.
