Green Chile Pork Tacos

This flavourful mix of Hatch green chiles, garlic, and lime will give a true Southwest flavour to these tacos. The other great thing about this slow cooker pork tacos recipe? You can set your timer, and forget it for up to 8 hours. When it's time for dinner, shred the pork, throw it back into the sauce, and serve with your favourite toppings.

    Reserve 1/4 cup green chile marinade in a small bowl.

    Place pork roast in a slow cooker. Pour remaining green chile marinade overtop. Cook until fork-tender, 8 hours on low.

    Combine sour cream, avocado and reserved 1/4 cup green chile marinade in a food processor or blender. Blend until smooth and creamy. Refrigerate until ready to serve.

    Transfer pork roast to a cutting board. Shred or roughly cut. Add pork back into the cooking liquid to absorb the green chile marinade.

    Serve with warm corn tortillas, avocado sauce, cilantro and onion.
