Grilled Bananas Foster Recipe
Preheat barbecue to medium.
Microwave brown sugar, margarine and rum in a small microwave-safe bowl on high until melted, about 20 seconds. Stir until smooth.
Cut four 12x18-in pieces of heavy-duty foil. Divide bananas amongst foil. Drizzle rum mixture overtop. Wrap foil loosely around mixture, sealing edges airtight with a double fold. Place each pouch on another 12x18-in foil sheet. Seal edges airtight with a double fold in opposite direction.
Barbecue pouches, shaking packages occasionally and turning packages once, until bananas are tender and caramelized, about 6 minutes. Open pouches, then top each with a scoop of ice cream. Serve immediately.
