    Preheat barbecue to medium.

    Whisk egg, mustard, Worcestershire sauce, salt and black pepper in a large bowl. Crumble in beef. Gently mix together. Divide into 6 portions. Form each into a 1-in thick patty. Using your thumb, make a shallow depression in centre of each. (This helps the patties keep their shape during grilling.)

    Oil grill. Barbecue burgers, lid closed, until an instant-read thermometer inserted into thickest part of burger reads 160°F, about 6 to 8 minutes per side. Top each patty with a cheese slice. Continue grilling until cheese melts, about 2 minutes.

    Layer bottom buns with cheeseburgers and other fillings (such as lettuce, onion, tomato and pickles), if desired. Sandwich with top buns.
