Grilled Pesto Chicken Caprese

This pesto chicken dish takes everything we love about caprese salad and bruschetta, and puts it together. Served on lightly grilled Italian style bread, and topped with fresh mozzarella, tomato and pesto—it's an irresistible summer meal.

    Preheat barbecue to medium-high.

    Coat chicken with 1 tbsp olive oil, then season with salt and pepper. Oil grill. Grill chicken until an instant-read thermometer inserted into thickest part reads 165°F, about 4 to 5 minutes per side.

    Top each of 4 slices of bread with 2 tomato slices, 1 chicken breast, 1 tbsp pesto and 1 slice mozzarella. Top with remaining 4 slices of bread. Brush outsides of bread with remaining 1 tbsp olive oil.

    Reduce heat to medium. Grill sandwiches until cheese starts to melt and bread is grill-marked, about 1 to 2 minutes per side.
