BBQ Cod Recipe With Lemon Herb Crust
Preheat barbecue to high.
Combine bread crumbs, Parmesan, lemon zest, salt and pepper in a small bowl. Add margarine and stir to form a crumbly mixture.
Stir mayonnaise and tarragon in a separate small bowl. Spread mayo mixture on top of each fillet, then sprinkle with crumb mixture.
Reduce heat to medium-high. Oil grill. Place fillets on grill. Barbecue, lid closed, until fish flakes easily with a fork and topping is nicely browned, about 10 to 12 minutes. Squeeze with lemon wedges before serving.
