BBQ Pork Chops, Peaches & Corn Recipe
Preheat barbecue to medium-high.
Whisk oil, 1 tbsp lime juice, ginger and garlic in a shallow dish. Add pork chops, turning to coat. Let stand for 10 minutes.
Meanwhile, oil grill. Barbecue peaches, cut-side-down, green onion and corn, turning halfway, until lightly browned and caramelized, about 4 minutes for peaches and up to 10 minutes for corn. Transfer to a cutting board to cool slightly.
Barbecue pork chops until an instant-read thermometer inserted into thickest part of chop reads 160°F, about 8 minutes.
Cut peaches into wedges, cut kernels off corn, and finely chop the green onions. Transfer to a large bowl. Lightly toss with remaining 1 tbsp lime juice and cilantro. Serve with pork chops.
