Salmon & Orange-Tomato Salsa Recipe
Preheat barbecue to medium-high.
Stir margarine with 2 tbsp cilantro in a small bowl.
Arrange salmon on a piece of foil. Brush with cilantro mixture. Transfer foil with salmon to grill. Barbecue salmon until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 15 minutes.
Meanwhile, combine oranges, tomatoes, green onions, remaining 4 tbsp cilantro and jalapeño pepper in a large bowl. Serve salsa with salmon.
