Spinach & Mushroom Chicken Burgers Recipe
Heat a medium frying pan over medium. Add butter, then 1/2 of onion, mushrooms and garlic. Cook, stirring occasionally, until tender, about 6 minutes. Stir in spinach and cook until wilted, 1 minute.
Transfer vegetable mixture to a large bowl. Add chicken, carrot, green onions, salt and pepper and mix to combine. Shape into 2 patties.
Return pan to medium. Fry burgers until cooked through, about 4 minutes per side.
Meanwhile, combine tomato with remaining 1/2 of onion in a small bowl. Serve burgers on buns, topped with tomato mixture.
