Spinach & Mushroom Chicken Burgers Recipe

Chicken Florentine, on a bun! These homemade chicken burgers are packed with extra goodness. And they don't take very long to make! Reserve some of the sautéed spinach and mushrooms that goes into your patty mix for burger toppings, and add your choice of sauce to serve.

    Heat a medium frying pan over medium. Add butter, then 1/2 of onion, mushrooms and garlic. Cook, stirring occasionally, until tender, about 6 minutes. Stir in spinach and cook until wilted, 1 minute.

    Transfer vegetable mixture to a large bowl. Add chicken, carrot, green onions, salt and pepper and mix to combine. Shape into 2 patties.

    Return pan to medium. Fry burgers until cooked through, about 4 minutes per side.

    Meanwhile, combine tomato with remaining 1/2 of onion in a small bowl. Serve burgers on buns, topped with tomato mixture.
