Teriyaki Shrimp Tacos Recipe
Preheat barbecue to medium.
Heat a small saucepan over medium. Add oil, then ginger and garlic. Cook, stirring, 30 seconds. Stir water, soy sauce and corn starch in a small bowl. Stir into saucepan. Stir in chicken concentrate until it melts, and bring to a boil. Remove from heat, then stir in brown sugar.
Remove 2 tbsp stock mixture and stir into mayonnaise. Set aside.
Toss shrimp with 1/4 cup stock mixture. Set aside.
Brush pineapple and onion with stock mixture. Oil grill. Barbecue pineapple and onion, flipping halfway, until tender, about 5 minutes. Chop and place in medium bowl. Grill shrimp until shrimp turns pink, about 5 minutes. Transfer to same bowl. Drizzle over any remaining stock mixture, then toss to coat.
Serve shrimp mixture in tortillas and top with mayonnaise sauce.
