Grilled Tomato Salsa
Preheat barbecue to medium-high.
Halve tomatoes crosswise. Brush half of the oil all over tomatoes and onions. Sprinkle with cumin.
Oil grill and barbecue tomatoes and onions, lid closed and turning once, until charred but not mushy, 6 to 10 min. Let stand until cool enough to handle. Coarsely chop tomatoes and onions and place in medium bowl. Stir in remaining 1 tbsp of the oil, vinegar, salt, pepper and cilantro. Add more vinegar, if desired.
Serve with grilled chicken or fish, on a burger or simply tortilla chips.
