Grilled Watermelon Caprese and Italian Beef Skewers
Preheat barbecue to medium-high.
Soak 4 wooden skewers in water for 15 min.
Combine steak cubes, 1 tbsp of the olive oil, Italian seasoning, garlic powder, 1/2 tsp of the salt and 1/4 tsp of the pepper in a medium bowl. Let stand 30 min.
Thread onto skewers. Oil grill with remaining olive oil, then barbecue skewers, lid closed, and turning occasionally, until beef is cooked, 8 to 12 min.
Whisk vegetable oil, honey and remaining 1/4 tsp of the salt and pepper in a small bowl. Set aside.
Cut watermelon into ¾-in. rounds. Slice each round into 1-in.-wide sticks.
Lightly oil grill, then barbecue watermelon, lid closed and turning once, until grilled marks appear about 4 min.
Arrange on plate, alternating with mozzarella rounds. Sprinkle with basil. Drizzle with oil mixture.
