Beef Skewers & Grilled Watermelon Caprese Recipe
Combine steak, 2 tbsp of the oil, Italian seasoning, garlic powder, 1/2 tsp of the salt and 1/4 tsp of the pepper in a medium bowl and toss to coat. Let stand for 30 minutes.
Meanwhile, place skewers in a shallow dish and cover with warm water. Let soak for 15 minutes.
Whisk remaining 1 tbsp of the oil, honey and remaining 1/4 tsp each of the salt and pepper in a small bowl. Set aside.
Cut watermelon into 3/4-inch rounds. Slice each round into 1-inch-wide sticks.
Preheat barbecue to medium-high.
Thread steak onto skewers.
Oil grill. Barbecue skewers, lid closed, until steak is browned, 2 to 3 minutes on all sides. Barbecue watermelon, lid closed and turning once, until grilled marks appear about 4 minutes.
Arrange watermelon and mozzarella slices on a serving plate. Sprinkle with basil and drizzle with oil mixture. Serve salad with steak skewers.
