Broccoli & Cheese Rotini Pasta Recipe

This vegetable pasta celebrates two ingredients that are meant to be together: broccoli and cheese. (And the homemade four-ingredient cheese sauce is incredibly easy to make.) Serve this rotini pasta recipe as a side dish, or add shredded rotisserie chicken as a fast-track trick to making it a full meal.

    Cook pasta in a large pot, following package directions, 7 to 9 minutes, adding frozen broccoli for the last 3 minutes of cooking. Drain well, then return to pot.

    Meanwhile, whisk together 1/2 cup of the milk, corn starch, Dijon, salt and pepper in a small bowl until smooth.

    Bring the remaining 2 1/2 cups of milk to a simmer in a large saucepan over medium-high. Slowly pour in the corn starch mixture while whisking.

    Return to a boil, reduce heat to medium-low and simmer, stirring constantly, until thickened, 1 to 2 minutes. Remove from heat. Add cheese until stir until melted and smooth.

    Pour cheese sauce over rotini and broccoli, tossing well to coat.
