Guiltless Vegetarian Chili
Heat oil over medium high.Add onion, carrot, celery and yellow pepper. Sauté 3-5 minutes or until starting to soften. Add garlic, mushrooms, jalapeno, spices and salt. Sauté 1-2 minutes longer, stirring often. Add remaining ingredients except cilantro. Bring to simmer then reduce heat to medium-low. Simmer uncovered for 30-40 minutes, stirring often, or until thickened and vegetables are cooked. Stir through cilantro just before serving.
