Classic Vegetarian Chili Recipe
Heat a pot over medium-high. Add oil, onion, carrot, celery and bell pepper. Cook, stirring occasionally, until vegetables start to soften, about 3 to 5 minutes.
Add mushrooms, garlic, jalapeño, chili powder and salt. Cook, stirring often, until mushrooms start to soften, 1 to 2 minutes.
Stir in broth, beans, corn, tomato paste and zucchini. Bring to simmer, then reduce heat to medium-low. Simmer, stirring often, until thickened and vegetables are tender, about 30 to 40 minutes.
Stir in cilantro just before serving.
