Baked Halibut with Lemon & Herbs
Position rack in centre of oven, then preheat to 450°F. Spray a large baking sheet with non-stick cooking spray.
Pat halibut dry with paper towels. Sprinkle with salt and black pepper. Arrange skin-side down on prepared sheet.
Bake halibut until an instant-read thermometer inserted into thickest part of fish reads 158°F, about 10 minutes.
Meanwhile, combine margarine, shallot, tarragon, parsley, mustard, lemon juice and garlic in small bowl.
Serve halibut with herb mixture drizzled over each fillet.
