
Ham & Cheese Puff Pastry Pinwheels

Position rack in centre of oven, then preheat to 400°F. Line a baking sheet with parchment.

Unroll puff pastry sheet, leaving it on the parchment paper it comes packaged in. Brush lightly with beaten egg. Cover pastry with slices of ham, cutting to fit. Leave 1-in along one edge empty to seal roll.

Brush ham lightly with egg, discarding any extra. Evenly scatter cheese over ham ensuring the 1-in gap along one edge stays clean. Starting at edge opposite the clean edge, roll into a log. Freeze to firm slightly, about 15 minutes.

Remove pastry from freezer and peel away parchment. Cut into 1-cm thick rounds and arrange 1-in apart on prepared sheet. Reform into circles, if needed. Press lightly with palm of your hand to flatten slightly.

Bake, rotating sheet halfway through, until puffed and lightly browned, about 25 to 30 minutes. Serve warm, or cool to room temperature and refrigerate in an airtight container for 1 to 2 days.
