Beef, vegetables and kidney beans are combined with crushed tomatoes, beef stock and chipotle chili powder for a meal low in fat and very high in fibre.

    Cook ground beef, onion and red pepper in large saucepan, stirring occasionally, until beef is browned and vegetables are tender.

    Stir in prepared beef stock, chipotle chile pepper, dried oregano, ground coriander and ground cumin.

    Stir in tomatoes and beans. Bring to a boil over high heat. Reduce heat to low and simmer, stirring occasionally, 15 minutes. Salt to taste. Serve, if desired, with shredded cheddar cheese, sour cream and/or chopped cilantro.
