Hearty Vegetable Barley Soup
Combine broth, onion and barley in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to medium-low. Simmer, covered, until barley is tender, about 45 minutes.
Add potatoes, carrots, celery, rutabaga, bay leaf, thyme and black pepper. Cook, covered, until vegetables are tender, about 15 minutes.
Before serving, remove bay leaf and discard. Divide soup into bowls, and garnish with parsley, if desired.
