Hearty Vegetable Barley Soup

A meal in a bowl, this vegetable barley soup shouts cozy on a cold winter day. To switch it up and make a vegetarian-friendly version, substitute vegetable broth for the beef broth. Tip: Barley has almost three times as much fibre per serving as oats!

    Combine broth, onion and barley in a medium saucepan set over medium-high. Bring to a boil, then reduce heat to medium-low. Simmer, covered, until barley is tender, about 45 minutes.

    Add potatoes, carrots, celery, rutabaga, bay leaf, thyme and black pepper. Cook, covered, until vegetables are tender, about 15 minutes.

    Before serving, remove bay leaf and discard. Divide soup into bowls, and garnish with parsley, if desired.
