Herbed Prime Rib Roast Recipe

An impressive roast recipe for holiday parties and other special occasions. Coat prime rib roast with this mixed spice rub and roast slowly for tender, flavourful meat. Tip: Let meat stand, covered, after cooking to allow juices time to redistribute. (Slice it too early and they all end up on the cutting board.)

    Position rack in centre of oven, then preheat to 350°F.

    Combine basil, oregano, garlic powder, onion powder, salt and pepper in a small bowl.

    Trim excess fat from top of beef, leaving a layer of fat about 1/4-in thick.

    Place roast on a rack in a shallow roasting pan. Brush beef with oil, then sprinkle with seasoning mixture.

    Roast, uncovered, until an instant-read thermometre inserted in the centre reads 130°F, for medium-rare, about 1 3/4 to 2 1/4 hours, or 140°F for medium, about 2 1/4 to 2 3/4 hours.

    Cover with foil and let stand 20 minutes before carving.
