
Roasted Butternut Squash with Apples

For your next big holiday meal, shake the sides up a bit! This roasted butternut squash side can easily replace the usual sweet potato casserole. Dish out the sweetly spiced spoonfuls (thank the nutmeg and cranberries) and watch it disappear before your eyes.

Position rack in centre of oven, then preheat to 425°F.

Combine all ingredients in a 1.5-L baking dish, tossing to coat.

Cover with foil. Bake for 30 minutes. Remove foil and continue baking until squash is tender, about 15 minutes.
