Strawberry-Vanilla Ice Cream Cake
Cut cartons away from ice cream with scissors. Arrange ice cream on its side, then cut each crosswise into 8 slices.
Arrange 4 ice cream slices flat in the bottom of a 9-in spring-form pan, pressing to form an even layer almost to the edge.
Arrange cookies vertically against side of pan with sides touching. Press ice cream against cookies to help stand up.
Evenly pour in fudge syrup. Top with remaining 4 ice cream slices, pressing to form an even layer. Freeze, covered, 5 hours or overnight.
To serve, remove ring from pan. Arrange cake on serving platter. Decorate top with strawberries.
Scoop jam into a small microwave-safe bowl. Microwave on high until just heated through, about 30 seconds. Brush strawberries with warm jam. Serve immediately.
