Strawberry-Vanilla Ice Cream Cake

Strawberry-Vanilla Ice Cream Cake

5-hour 25-Minute recipe Serves 20
This cake is celebration-worthy! All you need is a 9-in. spring form pan to put it together. Build cake with slightly softened ice cream (it will be easier to shape in the pan). Add a fudge layer in the middle, and Milano chocolate cookies around the sides. Top with whole strawberries before serving. Tip: To get the gorgeous sheen on your berries, brush them with warmed strawberry jelly.

Directions

Prep: 25-minute
  • 1

Cut cartons away from ice cream with scissors. Arrange ice cream on its side, then cut each crosswise into 8 slices.

  • 2

Arrange 4 ice cream slices flat in the bottom of a 9-in spring-form pan, pressing to form an even layer almost to the edge.

  • 3

Arrange cookies vertically against side of pan with sides touching. Press ice cream against cookies to help stand up.

  • 4

Evenly pour in fudge syrup. Top with remaining 4 ice cream slices, pressing to form an even layer. Freeze, covered, 5 hours or overnight.

  • 5

To serve, remove ring from pan. Arrange cake on serving platter. Decorate top with strawberries.

  • 6

Scoop jam into a small microwave-safe bowl. Microwave on high until just heated through, about 30 seconds. Brush strawberries with warm jam. Serve immediately.
