Herbed Vegetable Stuffing Recipe
Tip: Don't skip the fresh herbs—they add a lot of beautiful flavour to this stuffing that you won't get from dried herbs.
Position rack in centre of oven, then preheat to 400F.
Heat a pot over medium-high. Add margarine, then mushrooms. Cook, stirring occasionally, until tender, about 5 minutes. Stir in water and soup mix. Bring to a boil, then remove from heat.
Stir in cubed bread, parsley, sage and thyme. Transfer stuffing to a 9x13-in baking dish. Cover dish with foil.
Bake for 15 minutes. Remove foil, then bake until top is golden, about 10 more minutes.
