Beef and carrots are cooked in a savoury broth for this homestyle classic pot roast recipe. Meat emerges from the oven perfectly tender, and packed with flavourful juices. Each serving is an excellent source of iron.

    Position rack in centre of oven, then preheat to 350°F.

    Heat a large oven-proof pot over medium-high. Add oil, then beef. Cook until browned on all sides. Remove beef to a plate.

    Reduce heat to medium. Add onions. Cook, stirring often, 8 minutes. Stir in garlic and thyme. Cook 1 minute. Stir in stock concentrate, 1 cup water and wine until stock dissolves. Return beef to pot.

    Roast, covered, 2 hours. Stir in carrots. Continue roasting until carrots are tender and an instant-read thermometer inserted into thickest part of roast reads at least 145°F, about 30 more minutes. Remove beef and carrots to a serving platter and cover with foil to keep warm.

    Make the Gravy: Stir flour with remaining 1/3 cup water in a small bowl. Whisk into pot juices. Bring to a boil over high, then reduce heat to medium. Cook, stirring constantly, until sauce is thickened, about 5 minutes.

    Carve pot roast, then serve with gravy. Garnish with more fresh thyme leaves, if desired.
