Easy Meatloaf Recipe With Sweet Glaze

This classic recipe is easily made with a handful of ingredients. The loaf stays together with bread crumbs and eggs, getting a secret boost of flavour from onion soup mix. The final step: the meatloaf sauce bakes into a gorgeous glaze during the last 20 minutes, which is also just enough time to whip up mashed potatoes and your favourite veggies!

    Position rack in centre of oven, then preheat to 350°F.

    Stir soup mix, eggs, bread crumbs and 1/2 cup ketchup in large bowl. Crumble in beef and work, using your hands, into egg mixture until combined.

    Scoop mixture into a 9x13-in baking pan. Shape into a loaf, about 8x4 in.

    Bake for 40 minutes. Meanwhile, stir remaining 1/2 cup ketchup and vinegar in medium bowl.

    Spread ketchup mixture evenly over top of meatloaf. Continue baking until an instant-read thermometer inserted into thickest part of meatloaf reads 160°F, about 20 more minutes. Let stand 10 minutes before serving.
