Honey Mustard Chicken Fingers Recipe
Position rack in centre of oven, then preheat to 425°F. Line a baking sheet with parchment.
Combine mayonnaise, honey and Dijon Mustard in a medium bowl. Reserve 1/2 of mixture for dipping.
Add chicken to remaining mayonnaise mixture and stir to coat. Roll in crushed cornflakes to coat, then place onto prepared sheet.
Bake until an instant read thermometer inserted into centre of chicken reads 165°F, 10 minutes. Serve with reserved mayonnaise mixture for dipping.
