Honey Mustard Salmon Packets Recipe
Position rack in centre of oven, then preheat to 400°F. Lay 2 large pieces of parchment or foil on the counter.
Toss tomato, zucchini, bell pepper, garlic, oil and 1/4 tsp salt in a large bowl. Divide between sheets.
Lay one fillet over vegetables on each sheet.
Stir lime zest, honey, mustard and remaining 1/4 tsp salt in a small bowl. Spread over fish.
Fold parchment in half over fillets. Double-fold edges to seal completely and form a packet. Arrange packets on a rimmed baking sheet.
Bake packets until vegetables are cooked and an instant-read thermometer inserted into thickest part of fish reads 158°F, about 20 minutes.
Serve packets on plates with lime wedges, if desired.
