Celebration Ice Cream Cake
Remove half the ice cream sandwiches from freezer. Arrange in one layer over bottom of a 9x13-in glass baking dish, cutting to fit if necessary. (9 ½ sandwiches should fit comfortably.)
Spread ¾ cup jam over the sandwiches. Transfer baking dish to freezer for 15-20 minutes.
Scoop 4 cups ice cream into a bowl and mix gently to soften slightly. The texture should be the consistency of soft serve. Spread the softened ice cream over jam in an even layer. Return to freezer for the ice cream to firm up, about 15 minutes.
Meanwhile, prepare instant vanilla pudding according to package directions. Stir in half of whipped topping until smooth. Set aside.
Remove baking dish from freezer and spread remaining 3/4 cup jam evenly over ice cream layer. Top with remaining ice cream sandwiches. Evenly spread over the pudding mixture. Return to freezer until completely set, about 2 hours.
To serve, remove baking dish from freezer and spread over remaining whipped topping. Garnish with sliced fresh strawberries. If too firm to cut, allow the cake to stand at room temperature for 10 to 15 minutes before cutting.
