Treat yourself to ice cream truffles for dessert! Made with balls of chocolate ice cream rolled in toasted coconut, cookie crumbs, ground almonds or cocoa powder, these miniature treats—each one is like a mini chocolate sundae—are best eaten right out of the freezer.

    Line a baking pan with waxed paper. Pour assorted ice cream coatings, such as nuts, shredded coconut, chocolate cookie crumbs and cocoa powder, in separate bowls.

    Scoop chocolate ice cream by rounded tablespoonfuls and quickly roll into balls. Immediately roll in desired coating.

    Arrange truffles in prepared pan. Cover and freeze until firm, about 30 minutes. Serve immediately or keep frozen until ready to serve.
