Israeli Couscous Tabbouleh Recipe
Combine couscous and chicken broth in medium pot. Place over high heat and bring to a boil. Reduce heat to low, cover and cook until the liquid is absorbed, about 15 minutes. Set aside and let cool for 10 minutes.
Whisk together olive oil, lemon juice, garlic, salt and pepper in a large bowl. Add couscous, cucumber, tomatoes, parsley, mint and green onions and toss well to combine.
