Italian Baked Chicken Pasta Recipe

Baked with two cheeses, pan-fried chicken and tomatoes, this chicken pasta casserole is ready in under an hour with minimal effort. (The slow bake brings all the flavours together while melting the cheese to golden perfection.)

    Position rack in centre of oven, then preheat to 350°F. Spray a 9x13-in baking dish with non-stick cooking spray.

    Cook pasta, omitting salt, according to package directions.

    Meanwhile, heat a large non-stick frying pan over medium-high. Add oil, then chicken, onion and garlic. Cook, stirring occasionally, until chicken is browned, about 5 minutes. Stir in tomatoes and Italian seasoning. Bring to a boil, then reduce heat to medium-low. Simmer for 5 minutes, then remove from heat.

    Drain pasta, then add to chicken mixture in pan. Stir to coat. Stir in 1/4 cup Parmesan and half of mozzarella. Scrape into prepared dish. Cover with foil.

    Bake for 20 minutes. Remove foil, then sprinkle remaining 2 tbsp Parmesan and remaining mozzarella overtop. Bake until cheese melts, about 10 more minutes.
