
Kid-friendly Instant Pot Risotto

For Plain Risotto: Warm your broth of choice in a saucepan over medium heat, and keep warm over low.

Select the “Sauté” setting on your Instant Pot, and add oil and onion, stirring gently for about 3 minutes, until softened. Add in garlic and stir until fragrant, for an additional 45 seconds.

Add rice and salt to coat and stir for about 2 minutes. Add in the warmed chicken broth and stir, making sure that the rice is fully submerged. Secure the lid and select “Manual” setting, adjusting the pressure to High, and set time for 6 minutes.

Once the timer goes off, start with a Natural Release for 5 minutes, then carefully do a Quick Release to let the steam out and prevent overcooking.

Carefully remove the lid and stir in your ingredient combo of choice (see options below).

Add in Parmesan, butter and lemon juice. Serve with more Parmesan and pepper, if desired.
For Risotto with Peas and Bacon: Crisp bacon in the pot and remove before making the risotto. Follow steps 1 through 6, then stir in peas and bacon at the end.
For Sausage and Spinach Risotto: Stir in spinach and sliced sausage before serving.
For Cream of Pumpkin Risotto: Add pumpkin purée and thyme before sealing.
