Kid-Friendly Veg and Grain Bowls
Preheat oven to 400F, then line a baking sheet with parchment paper.
Dry chickpeas well, then toss with oil on prepared sheet. Bake until chickpeas are crisp and golden but still soft on the inside, 20 to 25 min. Cool.
Cook quinoa according to package directions. Fluff with fork and cool slightly.
Pack quinoa in a lunch container, drizzle with dressing, then top with veggies and chickpeas.
