Bring your “A” game to brunch with a beautiful asparagus and leek tart. Fit for hosting friends and family, this super moist dish is equal parts delicious and simple to make. It comes together in just one hour, but looks like it took you all morning.

Directions

Prep: 10 mins | Cook: 50 mins

    Position racks in centre and bottom of oven, then preheat to 375°F. Partially thaw pie shell on your counter for 10 minutes.

    Pierce bottom of partially thawed pastry with a fork, then bake in centre of oven for 10 minutes.

    Heat a large non-stick frying pan over medium. Add oil, then asparagus and leek. Cook, stirring occasionally, until tender, about 5 minutes. Transfer into baked pie shell. Sprinkle cheese evenly over vegetables.

    Whisk eggs, mayonnaise, Dijon, salt and black pepper in a medium bowl. Gradually whisk in milk until smooth. Pour over cheese in pie shell.

    Bake in bottom of oven until filling is set and top is lightly browned, about 35 minutes.
