Leftovers get a do-over with this quick and satisfying casserole. This leftover turkey casserole makes the most of everything left in your fridge after the holiday weekend. From stuffing to cranberry sauce and even the mashed potatoes, this casserole recipe has it.

Directions

Prep: 15 mins | Cook: 40 mins

    Position rack in centre of oven, then preheat to 375°F. Spray an 8x8-in baking dish with non-stick cooking spray.

    Spread 2 cups stuffing over bottom of prepared dish. Then top with turkey.

    Stir 1/4 cup mayonnaise-type dressing with cranberry sauce in a small bowl. Spread evenly over turkey.

    Stir potatoes, cheese and remaining 1/2 cup mayonnaise-type dressing in a large bowl. Evenly spread over casserole. Top with remaining 2 cups stuffing.

    Bake until casserole is heated through, about 40 minutes. Let stand 10 minutes before serving. Garnish with dried cranberries, if desired.
