Garlic & Lemon Chicken Recipe
Trim excess fat from chicken skin to prevent flare-ups on the grill. Make several shallow cuts in chicken with a sharp knife.
Whisk lemon juice, oil, garlic powder, oregano, basil, salt and pepper in a large bowl.
Add chicken and turn to coat. Marinate at room temperature for 20 minutes or in the refrigerator for up to 4 hours.
Preheat barbecue to medium-low.
Remove chicken from marinade, reserving marinade. Oil grill. Barbecue chicken, lid closed, for 15 minutes. Baste chicken with marinade.
Turn chicken and continue grilling, lid closed, until chicken an instant-read thermometer inserted into the thickest part of chicken reads 165°F, 15 to 20 more minutes.
