Lemon Chicken & Broccoli Sauté

Chunks of chicken and broccoli florets are sautéed in a delicate sauce of lemon and chicken stock. Ready in just 20 minutes, it's a go-to weeknight recipe everyone will love. To make it a full meal, serve over fluffy rice, or with these make-ahead smashed garlic and herb potatoes.

    Toss chicken with flour in a medium bowl.

    Heat a large nonstick frying pan over medium-high. Add 1 tbsp of the oil, then chicken. Cook, stirring occasionally, until chicken is cooked through, about 6 minutes. Transfer to a bowl.

    Add remaining 1 tbsp oil to pan, then broccoli and garlic. Cook for 1 minute. Stir in water and chicken stock until stock is dissolved. Bring to a boil.

    Reduce heat to medium-low and simmer until broccoli is tender-crisp, about 3 minutes. Return chicken to pan and heat through. Remove from heat and stir in lemon juice.
