In this lemon roasted chicken recipe, chicken is accompanied by potatoes and shallots and basted in a delicious mixture of margarine, chicken bouillon and lemon juice. This meal is just as healthy as it is flavourful.

    Position rack in centre of oven, then preheat to 375°F.

    Combine bouillon cubes, 4 tbsp margarine and lemon juice in a small microwave-safe bowl. Cover and microwave at high for 60 seconds. Stir, then set aside to cool slightly.

    Place chicken in large roasting pan. Place squeezed lemon rind into chicken cavity. Evenly spoon bouillon mixture over chicken.

    Toss potatoes, shallots and remaining 2 tbsp margarine in a large bowl. Arrange around chicken in roasting pan.

    Roast 1 hour. Baste chicken with pan juices and stir vegetables. Continue roasting, basting chicken and stirring vegetables occasionally, until vegetables are tender and an instant-read thermometer inserted into thickest part of thigh reads 165°F, about 45 more minutes.

    Remove vegetables and chicken to a serving platter. Serve with pan juices.
