Lemon Roasted Potatoes Recipe
Position rack in centre of oven, then preheat to 425°F.
Cover potatoes with cold water in medium saucepan and set over high. Bring to a boil, then reduce heat to low. Simmer, covered, until barely fork tender, about 3 minutes. Drain and place in a 9x13-in baking dish. (Potatoes should still be quite hard, or they will be mushy when you roast them.)
Whisk margarine and lemon juice in a small bowl. Drizzle over potatoes. Toss to coat.
Bake, stirring occasionally, until potatoes are golden and cooked through, about 20 minutes. Sprinkle with parsley and lemon zest.
