Lentil & Mushroom Stew Recipe
Heat a large pot over medium. Add margarine, then onion, celery, carrots, zucchini, mushrooms, garlic and crushed red pepper flakes. Cook, stirring occasionally, until vegetables are tender, 8 to 9 minutes.
Stir in tomatoes, water, broth and lentils. Increase heat to high and bring to a boil.
Reduce heat to low, cover, and simmer until lentils are tender, about 55 minutes. Stir in vinegar.
