
Loaded Broccoli Mashed Potatoes

Mashed potatoes loaded with broccoli, cheddar, bacon and sour cream. So filling, it's almost a meal unto itself! Tip: Let potatoes steam off in the drainer before putting back into your pot for mashing. This helps excess liquid evaporate, and leads to fluffier mashed potatoes.

Cover potatoes with water in a pot set over high. Bring to a boil, then reduce heat to medium-low. Gently boil until potatoes are fork-tender, about 15 minutes. Drain and return to pot.

Add margarine to potatoes. Mash until almost smooth. Add broccoli and lightly mash. Stir in cheese, sour cream, bacon and green onions.
