Morning Glory Muffins Recipe
Tip: For evenly domed morning glory muffins, scoop better into muffin pan with ice cream scoop or 1/4 cup measure.
Position rack in centre of oven, then preheat to 425°F. Spray a 12-cup muffin pan with non-stick cooking spray, or line with paper liners.
Combine muffin mix with cinnamon, applesauce, water and egg. Stir until just combined. Add carrot, cranberries, almonds, coconut and sunflower seeds. Fold mixture until evenly distributed. Let rest 5 minutes.
Divide batter between prepared muffin cups. Garnish tops with more sliced almonds and sunflower seeds, if desired.
Bake until a skewer inserted into the centre of muffins come out clean, about 18 to 22 minutes. Transfer to a rack. Let muffins cool completely before removing from pan.
