Loaded White Cheddar & Broccoli Pasta Recipe
Combine tomatoes, green onions, vinegar, salt and pepper in a large bowl. Set aside.
Heat a large non-stick frying pan over medium-high. Add 1 tbsp of the oil, then cauliflower. Cook, stirring frequently, until browned, about 5 minutes.
Stir in water, milk, remaining 2 tbsp of the oil, and white cheddar broccoli pasta. Increase heat to high and bring to a boil. Reduce heat to low, cover and cook, stirring occasionally, until pasta is tender, about 7 minutes. Add chickpeas, stirring to combine.
Serve topped with tomato salsa and sour cream.
